Eight cake mix packets, each with its own powdered sugar glaze packet, make single-serving microwave cakes in a mug. A fun gift for birthdays or dorm rooms.

Ingredients

  • 1 box cake mix any flavor
  • 1 instant pudding mix 4-serving size, any flavor
  • 2 2/3 cups powdered sugar divided into 8 glaze packets
  • 4 teaspoons dry flavoring divided into 8 glaze packets
  • 1 egg white for each serving
  • 1 tablespoon oil for each serving
  • 1 tablespoon water for each serving
  • 1 1/2 teaspoons water for each serving glaze

Directions

  • Stir the cake mix and pudding mix together in a large bowl until fully blended.
  • Spoon 1/2 cup of the dry mix into each of 8 sandwich bags.
  • For each glaze packet, put 1/3 cup powdered sugar and 1/2 teaspoon dry flavoring in a small bag and seal it.

Notes

Grease or spray a large coffee mug. Add one packet of cake mix plus 1 egg white, 1 tablespoon oil, and 1 tablespoon water; stir with a fork until smooth. Microwave on high 2 minutes. Meanwhile add 1 1/2 teaspoons water to a glaze packet, seal, and knead until smooth. Snip a corner and drizzle over the warm cake. Serve warm.
Storage: dry packets airtight in a cool, dry place about 6 to 12 months (follow the earliest box date). Leftover cake refrigerated within 2 hours, eat within 3 to 4 days.
