A dry cake and pudding mix portioned into packets, with a small glaze packet, so one mug cake takes a couple of minutes in the microwave. Pair the packets in a mug for a gift.

Ingredients

Mix (for the batch)

  • 1 box cake mix any flavor
  • 1 box instant pudding mix (4-serving size) any flavor
  • 1/3 cup powdered sugar
  • 1 1/2 teaspoons dry flavoring such as powdered lemonade, powdered orange drink mix, or cocoa powder

Per mug cake

  • 1/2 cup dry cake mix
  • 1 egg white
  • 1 tablespoon oil
  • 1 tablespoon water
  • 1 glaze packet
  • 1 1/2 teaspoons water (for the glaze)
  • Cooking spray or a lightly greased large mug

Directions

Make the mix

  • In a large bowl, mix the cake mix and pudding mix until completely blended.
  • Spoon 1/2 cup of the dry mix into each sandwich bag, which should give you about 9 packets.
  • Mix the powdered sugar with the dry flavoring in small bags to make the glaze packets.
  • To give as a gift, set one cake packet and one glaze packet in a large mug along with the cooking directions.

To use

  • Grease or spray a large mug.
  • Add one cake packet, the egg white, oil, and water, then stir with a fork until smooth.
  • Cook in the microwave on high for 2 minutes.
  • While it cooks, stir 1 1/2 teaspoons water into the glaze packet until it is smooth.
  • Snip off a small corner of the glaze packet and drizzle the glaze over the warm cake.
  • Enjoy it right away.

Notes

Storage: dry packets sealed in a cool, dry place up to about 6 months; eat cooked cake fresh, leftovers refrigerated 3 to 4 days.
