A single-serving pineapple crisp made from a small bag of dry mix and a fruit cup. Shake the mix together ahead, then microwave it in a mug when you want a warm dessert.

Ingredients

  • 1/4 cup dry pineapple cake mix
  • 1 tablespoon finely chopped walnuts
  • 1/2 teaspoon dry cherry gelatin
  • 1 (4 ounce) snack-size fruit cup of pineapple tidbits
  • 1 tablespoon butter or margarine

Directions

  • Add the cake mix, walnuts, and cherry gelatin to a small zip-top bag, close it, and shake to blend.
  • Keep the dry mix on its own until you are ready to cook.

Notes

Dump the pineapple tidbits into a 1 1/2 to 2 cup microwave-safe mug, add the dry mix, and stir in the butter or margarine. Microwave on HIGH 2 minutes; stir briefly before eating.
Storage: leftovers covered in fridge within 2 hours, 3 to 4 days; reheat to 165°F.
