A small bundle of garlic, oregano and peppercorns wrapped in corn husks and tied. Drop it into simmering soups, stews or beans, then remove it before serving.
Ingredients
3thin corn husks
4clovesgarlicunpeeled
6 to 8sprigsdried oreganobroken
1tablespoonblack peppercorns
Directions
Stack 2 corn husks on top of each other, lengthwise.
Place the garlic, broken oregano, and peppercorns in the middle.
Fold the husks around the seasonings into a snug bundle.
Tear the third husk into thin strips and use them to tie both ends securely; leave the middle loose so the liquid can reach the herbs.
To use, drop 1 bundle into simmering soups, stews, broths, braises, or dried beans at the start of cooking, and take it out before serving.
One bundle flavors about 6 to 8 cups of liquid; use 2 for a large stockpot.
Notes
Tip: warm brittle husks briefly in your hands before rolling. FOOD-SAFETY NOTE: the bundles contain fresh unpeeled garlic cloves; sealed airtight at room temperature for a year, fresh garlic can sprout or mold. Make shortly before use or use dried garlic instead.
