Ingredients

  • 3 thin corn husks
  • 4 cloves garlic unpeeled
  • 6 to 8 sprigs dried oregano broken
  • 1 tablespoon black peppercorns

Equipment

  • cutting board

Directions

  1. Stack 2 corn husks on top of each other, lengthwise.
  2. Place the garlic, broken oregano, and peppercorns in the middle.
  3. Fold the husks around the seasonings into a snug bundle.
  4. Tear the third husk into thin strips and use them to tie both ends securely; leave the middle loose so the liquid can reach the herbs.
  5. To use, drop 1 bundle into simmering soups, stews, broths, braises, or dried beans at the start of cooking, and take it out before serving.
  6. One bundle flavors about 6 to 8 cups of liquid; use 2 for a large stockpot.

Notes

Tip: warm brittle husks briefly in your hands before rolling. FOOD-SAFETY NOTE: the bundles contain fresh unpeeled garlic cloves; sealed airtight at room temperature for a year, fresh garlic can sprout or mold. Make shortly before use or use dried garlic instead.
