A homemade pineapple-coconut cake mix packed as eight mug cake kits, each with a glaze packet. Give them as gifts, then add an egg white, oil and water and microwave for 2 minutes.

Ingredients

  • 1 box pineapple cake mix 18.25 ounces
  • 1 small box coconut instant pudding mix
  • 8 heaping tablespoons sweetened flaked coconut
  • 1/3 cup confectioners' sugar for each glaze packet
  • 1 1/2 teaspoons vanilla powder for each glaze packet
  • 8 microwave-safe mugs 1 1/2 to 2 cup size; small zip-top bags and twist ties

Per mug, when baking

  • 1 egg white
  • 1 tablespoon vegetable oil
  • 1 tablespoon water
  • 1 to 1 1/2 teaspoons water (for the glaze)
  • Cooking spray

Directions

  • Stir the cake mix and pudding mix together until well blended.
  • Spoon 1/2 cup into each of 8 bags and label them "Cake Mix.
  • Split the coconut among 8 small bags, with one heaping tablespoon in each.
  • For each kit, put 1/3 cup confectioners' sugar and 1 1/2 teaspoons vanilla powder in a bag labeled "Glaze Mix," then fasten it to a cake bag with a twist tie.

Notes

Spray a mug, empty a cake bag into it, add egg white, oil, and water; stir until smooth. Microwave on HIGH 2 minutes. Stir the glaze packet with 1 to 1 1/2 teaspoons water until smooth; pour over the warm cake and sprinkle with the coconut.
Storage: dry packets airtight in a cool, dry place up to about 6 months; eat cake right away or refrigerate within 2 hours, 3 to 4 days.
