Ingredients

  • 1/3 cup aged balsamic vinegar (good quality)
  • 1/4 cup light-tasting extra virgin olive oil or avocado oil
  • 1 to 1 1/2 tablespoons spicy brown mustard
  • 2 tablespoons real maple syrup
  • 1 tablespoon thinly sliced fresh green onion
  • Sea salt and cracked black pepper to taste
  • 1 to 2 pinches crushed red pepper flakes (optional)

Equipment

  • mason jars

Directions

  1. Add everything to a small bowl, measuring cup, or glass jar with a tight lid. Whisk or stir with a fork until the oil and vinegar come together, or shake the jar.
  2. Taste and adjust: if too tangy, use more oil or sweetener; if not tangy enough, more vinegar or mustard; if bland, more vinegar, mustard, or salt and pepper.
  3. Serve right away, whisking or shaking again as needed.

Notes

Prep 5 minutes. Store leftovers covered in the refrigerator; keeps 3 to 5 days because of the fresh green onion.
