Ingredients

  • 1 tablespoon unsalted butter
  • 1 tablespoon dark brown sugar
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon pure vanilla extract
  • 1 large egg yolk
  • 3 tablespoons all-purpose flour
  • Pinch kosher salt
  • 2 tablespoons mix-ins such as chocolate chips, sprinkles, chopped nuts, or dried fruit
  • Flaky sea salt optional
  • Vanilla ice cream for serving

Equipment

  • mug

Directions

  1. In a small microwave-safe mug, microwave the butter on high for 20 to 35 seconds until melted, then tilt the mug so the butter coats the sides.
  2. Stir in both sugars, the vanilla, and the yolk with a fork.
  3. Add the flour and salt and stir until just combined. Fold in any mix-ins and top with flaky salt if you are using it.
  4. Microwave on high for 60 to 75 seconds, until puffed and springy.
  5. Let rest for 1 minute, then serve warm with vanilla ice cream.

Notes

Safety: raw egg yolk and flour; cook until puffed and set.
