Ingredients
Honey cakes
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1 cup unsalted butter softened
- 3/4 cup sugar
- 1/2 cup honey
- 3 eggs
- 1 1/2 teaspoons vanilla extract
- 3/4 cup sour cream
Honey cream cheese frosting
- 1 package (8 ounces) cream cheese softened
- 1/2 cup unsalted butter softened
- 1/4 cup honey
- 3 cups confectioners’ sugar
- 1/2 teaspoon almond extract
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon kosher salt
Equipment
- mason jars
- mixing bowl
- 9×9-inch pan
- hand mixer
Directions
- Heat the oven to 325°F. Line a 9×9 pan with parchment and coat it with baking spray.
- Whisk together the flour, baking powder, salt, and nutmeg.
- Beat the butter until fluffy, then add the sugar and honey and beat again until fluffy.
- Beat in the eggs one at a time, mixing well after each.
- Stir in the dry ingredients, followed by the vanilla and sour cream, just until blended. Spread the batter in the pan.
- Bake for 40–50 minutes, until a toothpick pushed into the center comes out clean. Let the cake cool in the pan for 10 minutes, then move it to a rack to cool completely.
- Frosting: Beat the cream cheese, butter, and salt for about 5 minutes, until fluffy. Beat in the honey, almond extract, and vanilla extract. Add the confectioners’ sugar about 1 cup at a time, beating until smooth. Scoop into a piping bag with a large fluted tip.
- Cut the cooled cake into small cubes. Layer cake cubes, piped frosting, and sliced almonds in each jar, then repeat the cake and frosting. Finish with almonds, sugar flowers, and a mini honey dipper.
Notes
Prep 40 min, cook 50 min. Cake is baked in a pan, not the jar. Serve immediately or refrigerate; take out about 15–20 minutes before serving so the frosting softens. Cake must be fully cool before assembling. Use room-temperature ingredients; don’t overmix. Allergy: almonds (tree nuts). Honey is not for babies under 1 year.
