Lemon Cake Mix in a Mug

Eight gift packets of lemon cake mix with a lemonade glaze, each one a single microwave mug cake. Keep them in a cool, dry place and give them with a tag.
Ingredients
- 1 (18.25 oz) box lemon cake mix
- 1 small box lemon instant pudding mix
- Glaze per packet: 1/3 cup confectioners’ sugar
- Glaze per packet: 1 1/2 teaspoons powdered lemonade mix
Equipment

Directions
- Stir the cake mix and pudding mix together in a large bowl.
- Spoon 1/2 cup of the dry mix into each of 8 bags and label them “Cake Mix.
- For each mug, mix the glaze ingredients in a separate bag and label it “Glaze Mix.
- Fasten one glaze packet to each cake packet with a twist tie.
- Put the baking directions on a gift tag.
Notes
Spray a 1 1/2 to 2 cup microwave-safe mug with cooking spray. Empty one cake packet into the mug; add 1 egg white, 1 tablespoon vegetable oil, and 1 tablespoon water; mix well. Microwave on HIGH 2 minutes. Stir one glaze packet with 1 teaspoon water until smooth and pour over the warm cake.
Storage: unopened dry packets airtight in a cool, dry place up to 6 months; leftover cake refrigerated within 2 hours, 3 to 4 days.
