Notes

Cheese sauce: whisk 1/2 cup mix with 1 cup cold water or milk in a small saucepan. Cook over medium heat, stirring constantly, until thick and creamy (about 4-6 minutes).
Ideas: stir into cooked pasta for mac and cheese; drizzle over broccoli or baked potatoes; mix into casseroles or rice dishes; add extra water for a thinner nacho sauce.
Creamy potato soup (from the notes): 4 cups diced potatoes, 1 cup diced onion (optional), 4 cups chicken broth, 1 batch prepared Cheese Sauce Mix, salt and pepper to taste, optional toppings (bacon, green onions, extra cheese, sour cream). Simmer potatoes, onion and broth 15-20 minutes until fork tender; lightly mash some potatoes if desired; prepare one batch of cheese sauce; stir in and simmer 5 minutes; adjust seasonings. Makes 6-8 servings.
Storage: 6-9 months in an airtight container, kept cool and dry. Prepared sauce: refrigerate up to 5 days, or freeze in half-cup portions up to 3 months.
Safety: contains milk powder, cheese powder and butter powder; use shelf-stable powdered cheese and keep the jar cool and dry.
