Notes

Sauce for one large pizza: 3 tablespoons dry mix, ½ cup cold water, 1 tablespoon olive oil. Whisk together in a small saucepan before heating; cook over medium heat, whisking constantly; it thickens in 2–4 minutes. Remove from heat once it coats a spoon (overcooking can thin it again). Spread on the dough; it thickens further while baking.
No-sauce method: brush raw dough with a thin layer of olive oil, sprinkle 1–2 teaspoons dry mix evenly over it (start with 1 teaspoon), then add toppings.
Storage: sealed pint mason jar in a cool, dry pantry up to 6 months; break up clumps with a spoon; shake before each use because the cornstarch settles.
Related herb blend, Pizza Seasoning Mix: 1 cup oregano, 1/2 cup basil, 1/4 cup onion flakes or onion powder, 1/4 cup garlic powder, 1/4 cup thyme, 1/4 cup parsley, 1/4 cup paprika, 1/4 cup black pepper, 1 1/2 TB salt; combine, store airtight away from heat and light, use to taste, best within about six months to a year.
