Ingredients

  • 2 cups cold all-natural fruit juice or juice blend
  • 1/4 to 1/3 cup sugar if using very tart juice such as pomegranate or cranberry
  • 1 envelope unflavored gelatin

Equipment

  • saucepan
  • whisk

Directions

  1. Warm 1 cup of the juice in a small saucepan until it just starts to simmer; do not let it cook. Turn off the heat and stir in the sugar, if using.
  2. Pour the other 1 cup cold juice into a medium bowl. Sprinkle the gelatin on top, stir, let it sit 2 minutes, and stir again.
  3. Stir the warm juice into the cold juice mixture. Pour into an 8 by 8-inch pan.
  4. Refrigerate until firm, about 4 hours. Cut into cubes.

Notes

Safety: Adult handles the hot juice on the stove. Gelatin is animal-based (not vegetarian). Soft cubes are generally fine for kids, but cut small for toddlers.
