Ingredients

Crust
  • 5 Tbsp all-purpose flour
  • 1 tsp granulated sugar
  • ⅛ tsp salt
  • 2 Tbsp cold salted butter cubed
  • 2 tsp ice water
Apple
  • 1 peeled and cored small-to-medium apple (5–6 oz)
  • ½ tsp salted butter
  • 2 tsp brown sugar divided
  • ⅛ tsp cinnamon
Sauce
  • ½ cup brown sugar
  • ½ cup water
  • 1 Tbsp salted butter
  • Optional vanilla ice cream or whipped cream

Equipment

  • saucepan
  • rolling pin
  • baking sheet

Directions

  1. For the crust, mix the flour, sugar, and salt. Rub in the cold butter, then add the ice water until the dough holds together. Shape it into a disc, wrap it, and refrigerate for 20 minutes.
  2. Roll the chilled dough between two sheets of parchment into a square or circle about 6 inches across.
  3. Heat the oven to 375°F and butter a 5-inch baking dish. Stand the apple upright in the center of the dough.
  4. Put the ½ teaspoon of butter and 1 teaspoon of the brown sugar in the hollow of the apple. Sprinkle the other 1 teaspoon of brown sugar and the cinnamon over the top, then bring the dough up around the apple and pinch the seams closed.
  5. Set the wrapped apple in the baking dish and put the dish on a rimmed baking sheet.
  6. For the sauce, bring the ½ cup of brown sugar, water, and 1 tablespoon of butter to a boil in a 1-quart saucepan, then simmer for about 2 minutes, until the sugar dissolves. Pour it over and around the dumpling.
  7. Bake for 30 to 35 minutes, until the crust is browned and the apple is tender when pierced. If the crust browns too fast, cover it loosely with foil. Let it rest for 5 minutes and serve warm, with ice cream or whipped cream if you like.

Notes

A 6-inch square of store-bought pie crust can stand in for the homemade crust.
