Ingredients

Mashed potatoes
  • 2 medium Yukon Gold potatoes scrubbed and quartered, unpeeled (6–7 ounces total)
  • ½ cup milk
  • ½ cup heavy cream
  • 2 garlic cloves smashed
  • ¼ teaspoon ground coriander
  • 1 tablespoon salted butter
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper
Sausage
  • ½ tablespoon olive oil
  • 1 thick pork sausage
Onion gravy
  • 1 tablespoon salted butter
  • ½ medium onion thinly sliced (4.5 ounces)
  • 1 garlic clove minced
  • ⅛ teaspoon kosher salt
  • 1 tablespoon all-purpose flour
  • ¾ cup beef broth
  • Black pepper to taste optional

Equipment

  • saucepan
  • skillet

Directions

  1. Put the potatoes in a 2-quart saucepan with the milk, cream, smashed garlic, and coriander. The liquid should nearly cover them; add a splash more milk if needed. Simmer for 15 to 20 minutes, until tender.
  2. Drain the potatoes over a bowl to save the cooking liquid, then put the potatoes and garlic back in the pan. Mash them, adding the saved liquid until they’re as creamy as you like. Stir in 1 tablespoon of butter, the oil, ½ teaspoon of salt, and the pepper. Keep warm.
  3. Heat ½ tablespoon of oil in a 10-inch skillet over medium heat. Cook the sausage for 3 to 4 minutes per side, until browned and it reaches 160°F. Move it to a plate and keep it warm.
  4. For the gravy, melt 1 tablespoon of butter in the same skillet over medium-low heat. Cook the onion, garlic, and ⅛ teaspoon of salt for 3 minutes, until soft.
  5. Stir in the flour and cook for 1 minute. Pour in the broth in two parts, stirring well, and simmer for about 2 minutes, until thick. Add pepper if you like.
  6. Put the sausage back in the gravy to warm. Serve it with the mashed potatoes, with the onion gravy poured over the top.
