Ingredients

  • ¼ cup heavy cream
  • ¼ cup whole milk
  • 1 large egg yolk
  • 1 tablespoon granulated sugar
  • 2 ounces semisweet chocolate
  • ¼ teaspoon vanilla extract

Equipment

  • saucepan
  • whisk

Directions

  1. Warm the cream and milk in a 1-quart saucepan over medium heat until steaming. Don’t let it boil. In a small bowl, whisk the egg yolk and sugar.
  2. Whisk a spoonful of the hot milk into the yolk, then keep adding it a little at a time, whisking the whole time. Pour it all back into the saucepan.
  3. Cook over medium heat, whisking constantly, until it’s thick enough to coat a spoon, usually about 1 minute.
  4. Take it off the heat. Chop the chocolate and stir it in with the vanilla until melted and smooth. Pour it into a ramekin or small dish and refrigerate for at least 2 hours, until set.
  5. Let it sit at room temperature for about 15 minutes before serving, if you like.
