Ingredients

  • 2 medium russet potatoes (1 pound) peeled and cut in chunks
  • 1 teaspoon kosher salt (used in boiling water)
  • 2 tablespoons salted butter plus optional extra for serving
  • 1 cup lightly packed chopped cabbage
  • 1 green onion chopped
  • 1 garlic clove minced
  • ½ cup 2% milk

Equipment

  • saucepan

Directions

  1. Put the potatoes in a 2-quart saucepan and cover them with about an inch of cold water. Add the salt, bring to a boil, and cook for 15 to 20 minutes, until soft.
  2. Drain the potatoes well and set them aside.
  3. In the same pot over medium heat, melt the 2 tablespoons of butter. Cook the cabbage for 3 to 4 minutes, until softened. Add the garlic and green onion and cook 1 minute more.
  4. Pour in the milk, add the potatoes back, and mash everything together so the cabbage is mixed through.
  5. Season to taste and top with a little more butter, if you like.

Notes

This makes one generous serving.
