Ingredients

  • ¼ cup salted butter plus ½ tbsp for dish
  • ¾ cup granulated sugar
  • 1 large egg
  • ½ tsp lemon juice
  • ¼ tsp vanilla extract
  • ¾ cup all-purpose flour
  • ¼ tsp ground cinnamon
  • ⅛ tsp ground nutmeg
  • ⅛ tsp baking powder
  • ⅛ tsp salt
  • ¼ cup milk
  • 1 cup chopped apples
  • Powdered sugar optional

Equipment

  • hand mixer
  • mixing bowl
  • baking sheet

Directions

  1. Heat the oven to 350°F. Butter a 5-inch square baking dish with the ½ tablespoon of butter and set it on a rimmed baking sheet.
  2. With a mixer, beat the ¼ cup of butter and the sugar for 2 to 3 minutes, until light. Beat in the egg, lemon juice, and vanilla.
  3. In another bowl, whisk the flour, cinnamon, nutmeg, baking powder, and salt. Add it to the butter mixture a little at a time, mixing just until combined.
  4. Mix in the milk, then gently fold in the apples, chopped into ½-inch pieces.
  5. Spread the batter in the dish and smooth the top. Bake for 40 to 45 minutes, until browned and a knife in the center comes out clean.
  6. Let it stand for 10 minutes. Serve it from the dish or turn it out onto a plate, and dust with powdered sugar if you like.
