Ingredients

  • ½ tbsp all-purpose flour
  • ¼ tsp garlic powder
  • ¼ tsp smoked paprika
  • ⅛ tsp salt
  • ⅛ tsp black pepper
  • 1 boneless pork chop 5–6 oz, approximately ½-inch thick
  • 1 tbsp olive oil
  • ¼ cup chopped onion
  • 1 garlic clove minced
  • ⅛ tsp smoked paprika for the gravy
  • ⅛ tsp dried thyme
  • ⅓ cup low-sodium chicken broth
  • 2 tbsp heavy cream

Equipment

  • skillet

Directions

  1. Stir together the flour, garlic powder, ¼ teaspoon of smoked paprika, salt, and pepper. Coat the pork chop on all sides.
  2. Heat the oil in a 10-inch skillet over medium-high heat. Sear the pork for 2 to 3 minutes on the first side and about 3 minutes on the second, until the thickest part reaches 145°F. Move it to a plate and cover it.
  3. If the pan looks dry, add another ½ tablespoon of olive oil. Add the onion and cook for 1 minute.
  4. Stir in the garlic, the ⅛ teaspoon of smoked paprika, and the thyme and cook for 30 seconds.
  5. Pour in the broth, scraping up the browned bits, and simmer for about 2 minutes. Stir in the cream and simmer for 2 minutes more, until the gravy thickens.
  6. Put the pork back in the pan, spoon the gravy over it, and heat for about 1 minute. Serve right away.
