Mom’s Apple Cake

A golden apple cake with chunks of apple baked into the top, in a disposable foil pan

This is my mom's apple cake. She made it often, and her recipe card is in my recipe box. She just sent me this photo of one fresh from her oven. It's a simple, moist cake full of apples, cinnamon, and walnuts, the kind you cut into squares and share.

Ingredients

  • 2 cups flour
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 4 cups apples cut small
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 2 teaspoons cinnamon
  • 1 cup walnuts
  • 1/2 cup salad oil vegetable oil

Directions

  1. Heat the oven to 350°F. Grease a 9-by-13-inch pan well and dust it lightly with flour. I use a disposable foil pan, about 13 by 10 inches.
  2. Mix everything but the flour, apples, and walnuts by hand, and blend well.
  3. Add the remaining ingredients and mix well.
  4. Spread the batter in the pan and bake for about 45 minutes, until a toothpick in the center comes out clean.
