Ingredients

  • 4 cups raw peanuts skin on, unroasted, unsalted
  • 1 pinch salt (optional)
  • Chocolate flavor: 2 tablespoon melted dark chocolate
  • Cinnamon flavor: listed, but no amount given

Equipment

  • baking sheet
  • food processor
  • airtight jar

Directions

  1. Heat the oven to 350°F (180°C). Spread the peanuts on a baking sheet and roast for 8-10 minutes, until lightly golden and glossy.
  2. Rub the warm peanuts in a towel until about half the skins fall off. Leave at least 2 cups with the skins on for extra flavor (they are harder to blend).
  3. Process on high for about 1 minute, until ground (this goes faster while they are still warm). Scrape down the sides.
  4. Process 1 more minute, then scrape. It will look dry and thick.
  5. Process 1 more minute, then scrape. It will look shiny, soft, but still thick.
  6. Process a few more minutes (usually under 2), until very smooth, lukewarm, and glossy.
  7. If you like, stir in salt and any flavoring at the end.

Notes

Using roasted, skinless peanuts is faster; skip step 1. Store in a sealed glass jar or airtight container in the pantry up to 3 months; stir in any oil that separates. No need to refrigerate.
