Notes

Per batch (1 jar): 6 ounces regular beer (3/4 cup), 1 egg white (optional), kosher salt (optional). Empty one jar into a medium bowl and stir in the yeast. Add the beer and stir until a soft dough forms. Knead gently on a lightly floured surface until smooth. Cover and let rise until doubled, about 45 minutes. Roll into a 10 x 6-inch rectangle, cut lengthwise into 6 strips. Shape or leave as strips; cover and let rise until nearly doubled, about 30 minutes. Brush with egg white and sprinkle with kosher salt if using. Bake on the top rack of a preheated 400°F oven about 8 minutes, until lightly golden. Cool on a wire rack.
Storage: dry mix sealed up to 6 months; prepared dough refrigerated, use within 3 to 4 days; pretzels up to 2 days at room temperature or 4 days refrigerated.
