Ingredients

Dry mix
  • 1 cake mix any flavor (a homemade cake mix can be used instead)
  • 1 (4 serving size) instant pudding mix any flavor
Glaze packet
  • 1/3 cup powdered sugar
  • 1 1/2 tsp dry flavoring (such as powdered lemonade mix, powdered orange breakfast drink mix, or cocoa powder)

Equipment

  • mixing bowl
  • zip-top bags
  • mug

Directions

Make the mix
  1. Mix the cake mix and pudding mix until completely blended.
  2. Scoop 1/2 cup of the dry mix into each sandwich bag (makes 8) and tie each one shut with ribbon.
  3. Stir the powdered sugar and dry flavoring together to make the glaze packet.
  4. Gift assembly: set a bag of cake mix and a glaze packet in a large coffee mug, and add a tag with the cooking instructions. If you like, tie a small wire whisk to the mug with raffia or ribbon.
To make one cake
  1. Coat the inside of the mug with cooking spray.
  2. Pour the cake mix into the mug. Stir in 1 egg white, 1 Tablespoon oil, and 1 Tablespoon water with a fork until smooth.
  3. Cook in the microwave on high for 2 minutes.
  4. While the cake is cooking, pour 1 1/2 tsp water into the bag of glaze mix. Close the bag and squeeze gently until smooth.
  5. Snip a small hole in one corner of the glaze bag and drizzle the glaze over the cake.
  6. Dig in while it is warm.

Notes

Flavor pairings: lemon cake mix with lemon pudding; yellow cake with vanilla pudding; devil’s food with chocolate pudding; pineapple cake with coconut pudding; butterscotch cake with butterscotch pudding; strawberry cake with strawberry pudding.
Variations: pull off the top half of the cake and add ice cream plus canned pie filling or hot fudge sauce. Egg-free: add a couple of teaspoons of egg replacement powder to each mix packet; on the tag, add 1 additional Tablespoon of water and omit the egg white.
