One serving of maple granola with oats, coconut and pecans, toasted in the microwave in a mug in about three minutes.
Ingredients
- 1 tablespoon maple syrup (honey or agave)
- 2 teaspoons water
- 2 teaspoons vegetable oil
- ⅛ teaspoons salt (⅛ teaspoon is half of a ¼ teaspoon)
- 4 ½ tablespoons rolled oats
- 1 tablespoon dessicated coconut
- 1 tablespoon pecans chopped
Equipment
- mug
Directions
- In a large microwave-safe mug, stir the syrup, water, oil, salt, oats and nuts until combined.
- Microwave for 1 minute 30 seconds, then stir, scraping up any syrup from the bottom of the mug.
- Microwave 1 minute more, or until the oats turn golden brown. Stay close, since they can burn quickly.
- Let it cool for 2 to 3 minutes before eating.
Notes
Prep 5 mins, cook 3 mins. Keep leftovers in an airtight container up to 5 days. Optional: after microwaving, stir in 1 tablespoon chopped dried fruit (raisins, apricots or cranberries). Timings based on a 1200W microwave; mug size and width also affect time.
