Ingredients

Cake
  • 1/3 cup flour
  • 1/4 cup sugar
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/4 cup buttermilk
  • 1 teaspoon cream soda
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons melted butter
Frosting
  • 3 cups powdered sugar
  • 1 cup unsalted butter at room temperature
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract
  • 2 tablespoons milk
  • 2 tablespoons butterscotch syrup

Equipment

  • mixing bowl
  • mug
  • hand mixer

Directions

  1. Stir the cake ingredients together in a bowl.
  2. Coat a glass mug with cooking spray, pour in the batter, and microwave for 2 minutes and 15 seconds.
  3. Let cool. Beat the frosting ingredients together.
  4. Spread frosting over the top, or scoop out some of the cake and layer cake and frosting, finishing with frosting.
  5. Drizzle with butterscotch syrup and serve.

Notes

Refrigerate leftover frosting; it makes enough for 2 to 3 mug cakes. Safety: the batter contains raw flour, so cook it through.
