Dairy-free: replace the dry buttermilk with ¾ cup nutritional yeast plus ¼ tsp citric acid; pair with dairy-free mayo and dairy-free sour cream.
Dressing: 2 tbsp mix, ½ cup mayonnaise, ½ cup sour cream or plain Greek yogurt; thin with ⅔ to 1 cup buttermilk (or water); whisk smooth; refrigerate 30 minutes before serving.
Dip: 1 cup sour cream or plain Greek yogurt and 2–3 tbsp mix; a splash of buttermilk (optional) to adjust.
Dry seasoning: 2 tbsp directly on chicken, potatoes, ground meat or popcorn.
Other swaps: milk powder version, ¾ cup dry milk powder plus ¼ tsp citric acid or powdered lemon juice in place of the dry buttermilk; more dill, 1 tablespoon dried dill instead of 2 teaspoons.
Storage: sealed jar in a cool, dry pantry up to six months; keep away from steam and humidity; shake before each use; label with the date.
