Notes

Pudding: 1 pkg of mix, 2-1/4 cups cold water, 1-1/2 tsp vanilla. Combine mix and cold water in a heavy saucepan over medium heat; whisk constantly until it boils; boil one full minute, still whisking. Remove from heat; stir in vanilla.
Variations: Chocolate: increase stevia to taste (1/4 tsp more works well) and add 1/3 cup cocoa or 2 oz finely chopped unsweetened baker’s chocolate. Banana: reduce vanilla extract to 1/2 tsp and add 1 tsp banana extract. Coconut: after cooking, stir in 1/2 cup unsweetened flaked coconut.
