Ingredients

  • 3 golden beets greens reserved
  • 1 large sweet potato chopped
  • 1 tablespoon plus 1 teaspoon olive oil
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cayenne
  • 1 cup dry wheat berries
  • 2 cup water
  • 2 cloves garlic peeled
  • 2 tablespoon sunflower seeds
  • 1 tablespoon maple syrup
  • 2 tablespoon apple cider vinegar
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon kosher salt
  • black pepper to taste

Equipment

  • baking sheet
  • saucepan
  • mason jars

Directions

  1. Heat the oven to 425 degrees.
  2. Wrap the beets loosely in foil and place them on a baking sheet. Rub the sweet potato with 1 tablespoon olive oil, coat it with the cinnamon and cayenne, and put it on the sheet too. Bake for 45 minutes. Let the beets cool, then peel and chop them.
  3. Put the wheat berries and water together in a pot. Bring to a boil over high heat, turn down to a simmer, and cook for 45 minutes, until tender.
  4. Warm the rest of the olive oil in a saute pan over medium heat. Add the beet greens and 1 garlic clove and cook for about 2-3 minutes, until tender.
  5. Toss the beets, sweet potato, wheat berries, greens and sunflower seeds together in a bowl.
  6. Shake the maple syrup, vinegar, mustard, the rest of the garlic, salt and pepper together in a jar.
  7. Pour the dressing over the salad, toss and serve right away.
