Ingredients

Apple filling
  • 1 medium apple peeled, cored, and chopped
  • 1 tablespoon sugar
  • ½ teaspoon cinnamon
  • 1 teaspoon lemon juice
  • 1 tablespoon salted butter cut into small bits
Crust
  • 2½ tablespoons all-purpose flour
  • ¼ teaspoon sugar
  • Pinch of salt
  • 1 tablespoon cold salted butter
  • 1 teaspoon ice water

Equipment

  • mixing bowl
  • rolling pin
  • baking sheet

Directions

  1. Heat the oven to 375°F. Toss the apple with the 1 tablespoon sugar, cinnamon, and lemon juice.
  2. For the crust, mix the flour, ¼ teaspoon sugar, and salt. Cut in the 1 tablespoon cold butter until the mixture looks like coarse crumbs.
  3. Drizzle in the ice water until the dough just holds together. Roll it into a circle that fits your ramekin or small pie pan.
  4. Put the apples in a 10-ounce ramekin and dot them with the butter bits. Lay the dough over the fruit and leave an opening for steam. Set the dish on a baking sheet.
  5. Bake for about 20 minutes, until the crust is golden and the apples are soft.
