One boneless chicken breast rubbed with olive oil and a smoky paprika seasoning, baked until juicy. An easy weeknight dinner for one.
Ingredients
- 1 boneless skinless chicken breast (5–6 oz.)
- 1 teaspoon olive oil
- ¼ teaspoon kosher salt
- ⅛ teaspoon black pepper
- ⅛ teaspoon garlic powder
- ⅛ teaspoon smoked paprika
Equipment
- baking sheet
Directions
- Heat the oven to 400°F and line a rimmed baking sheet with parchment or foil.
- If one end of the chicken breast is much thicker than the other, pound it gently so it’s more even and cooks at the same rate.
- Stir together the salt, pepper, garlic powder, and smoked paprika.
- Put the chicken on the pan, rub both sides with the olive oil, and sprinkle the seasoning all over.
- Bake for 20 to 25 minutes. Use a meat thermometer in the thickest part. When it reads 160°F to 162°F, take it out and cover it loosely with foil.
- Let it rest for 5 to 10 minutes. It keeps cooking as it rests and should reach 165°F before you slice it.
Notes
Chicken is done at 165°F. If it hasn’t reached 165°F after resting, put it back in the oven for a few more minutes.
