Ingredients

  • 2 bone-in skin-on chicken thighs
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp paprika
  • ¼ tsp dried oregano
  • ¼ tsp kosher salt
  • ⅛ tsp coarsely ground black pepper
  • 1½ tsp olive oil

Equipment

  • baking sheet
  • mixing bowl

Directions

  1. Heat the oven to 400°F. Pat the chicken thighs completely dry.
  2. Mix the garlic powder, onion powder, paprika, oregano, salt, and pepper. Set aside ¼ teaspoon of the seasoning, and stir the olive oil into the rest.
  3. Rub the seasoned oil all over the chicken, working some of it under the skin.
  4. Set the thighs on a wire rack over a rimmed baking sheet and sprinkle the skin with the seasoning you set aside.
  5. Roast for 30 to 35 minutes, until the thickest part reaches about 170°F. Let the chicken rest for 5 minutes before serving.

Notes

This makes 2 thighs. A wire rack helps the skin crisp, but the thighs can go right on the baking sheet.
