Ingredients

Pudding
  • ½ cup whole milk
  • 2 tablespoons granulated sugar
  • ⅛ teaspoon salt
  • ¼ cup heavy cream
  • 1 tablespoon cornstarch
  • ½ tablespoon butter
  • ¼ teaspoon vanilla extract
Bananas
  • 1 tablespoon butter
  • 1 tablespoon packed brown sugar
  • ⅛ teaspoon cinnamon
  • 1 medium banana sliced
Whipped cream
  • ¼ cup heavy cream
  • 1 teaspoon granulated sugar
Layers
  • 6–8 vanilla wafers

Equipment

  • saucepan
  • skillet
  • whisk

Directions

  1. For the pudding, warm the milk, 2 tablespoons of sugar, and salt in a 1-quart saucepan over medium-low heat for about 5 minutes, until steaming. In a small bowl, whisk ¼ cup of the cream with the cornstarch. Slowly stir it into the milk and keep stirring until it simmers and thickens. Take it off the heat, stir in ½ tablespoon of butter and the vanilla, and let it cool.
  2. For the bananas, melt 1 tablespoon of butter in a skillet over medium-low heat. Stir in the brown sugar and cinnamon for about 30 seconds. Add the banana slices and stir for about 1 minute, until softened.
  3. Whip the other ¼ cup of cream with 1 teaspoon of sugar until it holds soft peaks.
  4. In a small dessert dish, layer half the vanilla wafers, half the bananas, and half the pudding. Repeat the layers and top with the whipped cream. Eat it warm or chill it first.
