Chicken Spaghetti for One
Ingredients
- 1 boneless skinless chicken breast or thigh (6 ounces)
- ⅛ teaspoon kosher salt
- Water to cover chicken by about 1 inch
- 2 ounces dry spaghetti
- 1 tablespoon salted butter
- ¼ cup chopped onion
- 1 tablespoon all-purpose flour
- ¼ teaspoon Italian seasoning
- ¼ teaspoon kosher salt
- ⅛ teaspoon coarsely ground black pepper
- ⅛ teaspoon garlic powder
- ½ cup milk
- ½ cup low-sodium chicken broth
- 1 small tomato chopped
- ½ cup shredded cheddar cheese
Equipment
- saucepan
- skillet
- stockpot
Directions
- If you are using raw chicken, put it in a saucepan with the ⅛ teaspoon salt and enough cold water to cover it by about 1 inch. Bring it just to a simmer, cover, and cook for 10 to 12 minutes, until it reaches 165°F. Let it rest for 10 minutes, then chop it. You can skip this step if you use 1 cup of cooked chicken.
- Boil the spaghetti for about 7 to 8 minutes, until al dente, then drain.
- In an 8-inch skillet, cook the onion in the butter for 4 minutes. Stir in the flour and cook for 1 to 2 minutes. Add the Italian seasoning, ¼ teaspoon salt, pepper, and garlic powder.
- Slowly stir in the broth and milk. Simmer for about 5 minutes, until thick.
- In a bowl, combine the chicken, tomato, and cheddar. Pour the warm sauce over the top.
- Stir in the drained spaghetti until it is coated and the cheese melts. Serve right away.
