Cottage Pie for One
Ingredients
- 1 medium Yukon Gold potato (about 7 ounces)
- ½ cup whole milk
- 1 garlic clove minced
- 1 tablespoon salted butter
- ⅛ teaspoon kosher salt
- 1 strip bacon
- 2 tablespoons chopped onion
- 1 small carrot diced
- 1 garlic clove minced
- ¼ teaspoon kosher salt
- 4 ounces ground beef
- ¼ teaspoon dried basil
- 1 teaspoon Worcestershire sauce
- ¼ cup frozen peas
- ¼ cup low-sodium beef broth
- 1 tablespoon grated Parmesan
- Optional: parsley
Equipment
- saucepan
Directions
- Cut the potato into quarters and put it in a small saucepan with the milk and one garlic clove. Simmer for about 15 minutes, until soft. Drain it over a bowl to save the milk. Mash the potato with about ¼ cup of the warm milk, the butter, and ⅛ teaspoon of salt, adding a little more milk if it’s stiff.
- Heat the oven to 350°F. Chop the bacon and cook it in a saucepan until browned. Move it to a plate.
- In the bacon drippings, cook the onion, carrot, the second garlic clove, and ¼ teaspoon of salt for 2 minutes. Add the beef and basil and cook for about 3 minutes, breaking it up, until browned.
- Stir in the Worcestershire sauce and peas. Pour in the broth, bring it to a boil, and simmer for 8 to 10 minutes, until only a little liquid is left. Stir the bacon back in.
- Spoon the filling into a lightly greased 10-ounce ramekin. Spread the mashed potato over the top and sprinkle with the Parmesan.
- Set the ramekin on a baking sheet and bake for 20 minutes. Top with parsley, if you like.
