Ingredients

  • ¼ cup granulated sugar divided (2 Tbsp caramel, 2 Tbsp custard)
  • 1 Tbsp water
  • 1 large egg
  • ½ cup whole milk
  • ¼ tsp vanilla extract
  • ⅛ tsp salt

Equipment

  • saucepan
  • whisk
  • mixing bowl
  • fine sieve

Directions

  1. Heat the oven to 350°F.
  2. Cook 2 Tbsp of the sugar with the water until it turns a deep amber caramel. Quickly pour it into a 10-oz ramekin and swirl to coat the bottom.
  3. Warm the milk with the remaining 2 Tbsp sugar until the sugar dissolves.
  4. Beat the egg in a bowl. Slowly whisk in the warm milk, then add the vanilla and salt.
  5. Pour the custard through a strainer into the caramel-coated ramekin.
  6. Set the ramekin in a larger baking dish and pour hot water partway up its sides. Bake for about 45 minutes, until the center is just set.
  7. Let it rest in the water for about 1 hour, then chill for about 12 hours before turning it out onto a plate.
