Ingredients

  • 1 tablespoon olive oil plus 1 teaspoon for pita
  • ½ cup chopped onions
  • ½ cup chopped red bell pepper
  • 1 minced garlic clove
  • 1 teaspoon tomato paste
  • 3–4 ounces ground beef
  • 2 tablespoons water
  • ½ teaspoon kosher salt plus pinch for pita
  • ¼ teaspoon coarsely ground black pepper
  • 1 pita bread
  • ½ cup shredded smoked Gouda
  • Sliced avocado optional

Equipment

  • skillet
  • baking sheet
  • cutting board

Directions

  1. Heat the oven to 400°F. Warm 1 tablespoon oil in a skillet and cook the onions and red pepper for about 3 minutes, until soft.
  2. Add the garlic and cook for 30 seconds. Stir in the tomato paste and cook for 1 more minute.
  3. Add the beef, water, ½ teaspoon salt, and the black pepper. Cook for about 4 minutes, until the beef is browned and reaches 160°F. Move the mixture to a plate and wipe out the skillet.
  4. Brush the pita with the remaining 1 teaspoon oil and sprinkle with a pinch of salt. Toast it in the skillet for about 45 seconds per side.
  5. Put the pita on a baking tray. Scatter the Gouda over it and top with the beef mixture. Bake for 5 to 6 minutes, until the cheese melts. Add avocado if you like.
