Ingredients

  • 1 medium sweet potato (about 8 oz)
  • 1 tbsp olive oil
  • ¼ tsp ground cinnamon
  • ⅛ tsp paprika optional but suggested
  • ⅛ tsp kosher salt
  • ⅛ tsp coarse black pepper

Equipment

  • baking sheet
  • cutting board
  • chef’s knife

Directions

  1. Set a rack in the middle of the oven and heat it to 425°F. Line a rimmed baking sheet with parchment.
  2. Scrub and dry the sweet potato. Peel it or leave the skin on. Cut it in half lengthwise, then cut each half into wedges.
  3. Put the wedges on the baking sheet. Drizzle with the oil, sprinkle with the cinnamon, paprika (if using), salt, and pepper, and toss to coat.
  4. Bake for 20 minutes. Flip the wedges with a spatula and bake for 5 to 10 minutes more, until tender and browned at the edges.
  5. Serve hot. For extra browning, broil them for 1 to 2 minutes at the end.
