Ingredients

  • 3 tablespoons salted butter melted
  • 4 tablespoons packed brown sugar
  • 2 tablespoons granulated sugar
  • 1 large egg yolk
  • ¼ teaspoon vanilla extract
  • ⅓ cup all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon salt
  • ½ cup old-fashioned oats

Equipment

  • mixing bowl
  • baking sheet

Directions

  1. Heat the oven to 325°F and line a baking sheet with parchment.
  2. Stir the melted butter and both sugars together. Stir in the egg yolk (just the yolk, not the whole egg) and the vanilla.
  3. In another bowl, mix the flour, baking soda, cinnamon, and salt. Stir it into the butter mixture, then stir in the oats.
  4. Drop heaping tablespoons of dough about 2 inches apart on the baking sheet.
  5. Bake for 8 to 10 minutes, until the edges are lightly browned but the middles are still soft.
  6. Let them sit on the hot pan for 5 minutes to firm up, then move them to a rack.
