Ingredients

  • Strawberries

Equipment

  • dehydrator
  • spice grinder
  • airtight jar

Directions

  1. Wash the strawberries and cut off the green tops.
  2. Cut into 1/4″ slices.
  3. Arrange on dehydrator trays covered with a mesh sheet.
  4. Dry for 8-10 hours at 135°F.
  5. Grind the dried strawberries to a powder in a large blender or coffee grinder.
  6. Keep in an airtight container.

Notes

Use in yogurt, smoothies, shakes and baking. Before grinding, slices should be crisp and snap with no soft centers; condition them in a closed jar for several days (shake daily, watch for condensation). Fruit powder is hygroscopic and clumps quickly; store airtight, ideally with a desiccant.
