Ingredients

  • 16 oz strawberries
  • ½ cup granulated sugar
  • 1½ tbsp cornstarch
  • 1½ tbsp water

Equipment

  • saucepan
  • mixing bowl
  • cutting board

Directions

  1. Hull the strawberries and cut them into even bite-size pieces. Set aside about a third of them (roughly 6 oz) to add at the end.
  2. Put the rest of the strawberries and the sugar in a 2-quart saucepan and bring to a boil. Boil for about 1 minute as the berries release their juice.
  3. Stir the cornstarch into the water until smooth, then stir it into the boiling fruit and bring it back to a boil.
  4. Lower the heat and simmer for 5 to 7 minutes, stirring often, until thick and glossy.
  5. Take it off the heat and let it cool in a bowl for about 30 minutes. Stir in the strawberries you set aside.
  6. Cover and refrigerate for at least 3 hours to set.
