Ingredients

  • ½ tablespoon butter
  • ⅓ cup chopped onions
  • 1 medium chopped carrot
  • 1 stalk chopped celery
  • 1 minced garlic clove
  • 1½ cups chicken or vegetable broth
  • 1 bay leaf optional
  • 1 piece Parmesan rind optional
  • 4 ounces cheese tortellini
  • Salt to taste
  • Grated Parmesan to finish

Equipment

  • saucepan
  • cutting board
  • chef’s knife

Directions

  1. Melt the butter in a 2-quart saucepan over medium heat. Cook the onions, carrot, and celery for 3 to 4 minutes, until soft. Add the garlic and cook for 30 seconds.
  2. Pour in the broth, and add the bay leaf and Parmesan rind if you are using them. Cover and simmer gently for 15 to 20 minutes.
  3. Remove the bay leaf and rind. For a clear broth, strain out the vegetables, or leave them in.
  4. Bring the broth back to a gentle boil. Add the tortellini and cook for 3 to 4 minutes, until tender and floating.
  5. Season with salt and top with grated Parmesan.
