Ingredients

  • 1/4 cup milk warmed under 110 degrees
  • 1/4 cup butter melted
  • 1/3 cup brown sugar
  • 2 1/4 teaspoons active dry yeast or 1 packet
  • 20 ounce canned crushed pineapple
  • 2 whole eggs beaten
  • 4 cups all-purpose flour or whole wheat pastry flour plus up to an additional 1/4 cup
  • 1 teaspoon salt
  • Additional butter for greasing bowl pans and buttering tops of rolls

Equipment

  • stand mixer
  • 9×13-inch pan

Directions

  1. Butter a medium bowl and put it aside.
  2. In a mixer fitted with a dough hook, combine the milk, melted butter, brown sugar, and yeast. Leave for 5-7 minutes, until bubbly.
  3. Drain the pineapple, keeping 2/3 cup of the juice and 1/3 cup of the crushed pineapple.
  4. Mix the 2/3 cup juice, 1/3 cup pineapple, and the eggs into the yeast mixture until well blended.
  5. Add the 4 cups flour and scatter the salt over it. Knead on medium-low until most of the flour has been taken in.
  6. Mix on medium for about 5 minutes, until the dough is soft and not sticky anymore; if it still sticks, work in flour 1 tablespoon at a time, up to 1/4 cup.
  7. Put the dough in the buttered bowl, cover with plastic wrap or a damp towel, and let it double in a warm spot out of drafts, about 1-1 1/2 hours.
  8. Butter a 9″x13″ pan and an 8″ round cake pan.
  9. Cut the dough in half, then cut each half into 8 pieces.
  10. Roll each piece into a smooth ball by tucking the edges underneath and pinching. Put 12 in the 9″x13″ pan and 4 in the cake pan. Cover them.
  11. To make ahead: refrigerate the shaped rolls for up to 2 days; take them out 1-1 1/2 hours before baking and let them double.
  12. To bake right away, let the rolls double in a warm spot out of drafts, about 45 minutes to 1 hour.
  13. Heat the oven to 350 degrees.
  14. Bake for 25-30 minutes, until golden brown.
  15. Brush the hot rolls with butter and leave them to cool.
