Ingredients

  • 2 cups (16floz/450ml) full fat milk or low fat milk
  • ⅔ cups (5oz /142g) white sugar

Equipment

  • saucepan
  • mason jars

Directions

  1. Pour the milk and sugar into a small, heavy-bottomed saucepan.
  2. Warm over low heat until the sugar melts away.
  3. Raise the heat to medium-low and bring to a simmer. Once it simmers, leave it unstirred, because stirring can make it crack and crystallize.
  4. Let it simmer gently for about 35-40 minutes, until it has deepened to a creamy color, cooked down by half, and thickened a little. Skim off any foam. Do not stir in the sugary bits stuck to the rim.
  5. Take the pan off the heat and pour the milk into a jar. Let it cool all the way before you put on an airtight lid. After a few hours in the fridge, it thickens a great deal.
  6. Keep in a labeled jar in the fridge.

Notes

Prep 5 minutes, cook 40 minutes. Keeps 6 months in the fridge. Any nut milk can replace dairy milk. Coconut sugar, maple syrup, light honey or other natural sugars that caramelize can replace white sugar; stevia, xylitol and Splenda will not work.
