  • 1/4 cup cocoa powder
  • 2 teaspoons instant coffee

  • 2 tablespoons caraway seeds (packaged separately)

Equipment

  • mixing bowl
  • zip-top bags

  2. Place the caraway seeds in a small bag of their own.

Notes

To bake: 1 package bread mix, 1 1/2 cups very warm water, 1/2 cup molasses, 2 tablespoons salad oil, cornmeal for the pan, cornstarch wash for brushing.
Stir about half the mix into a large bowl; add water, molasses, and oil; mix until blended. Rest 5 to 7 minutes. Gradually add the remaining mix until a stiff dough forms. Knead thoroughly; place in a greased bowl, cover, and let rise in a warm spot until doubled, about 2 hours. With wet hands, stretch the surface under on all sides into a tight ball; shape into an oval loaf. Place on a cornmeal-dusted pan; rise 40 minutes. Brush with cornstarch wash; sprinkle caraway if using. Cut deep parallel slashes with a serrated knife. Bake at 375°F for 45 to 50 minutes, until deep brown.
Storage: dry mix sealed in a cool, dry place about 3 to 6 months (whole wheat flour is the limiting factor; fridge or freezer extends). Loaf wrapped at room temperature up to 3 days; sliced and frozen up to 3 months.
