Ingredients

  • ½ cup old-fashioned oats
  • 1 teaspoon granulated sugar
  • ¼ teaspoon baking powder
  • Dash of salt
  • ½ medium banana mashed
  • 1 egg
  • 3 tablespoons milk (any kind)
  • ¼ teaspoon vanilla extract
  • 3 medium strawberries diced

Equipment

  • mug

Directions

  1. Spray a large microwavable mug or small bowl with cooking spray. Add the oats, sugar, baking powder and salt, and stir together.
  2. Stir in the banana, egg, milk and vanilla. Gently fold in the strawberries.
  3. Microwave on medium power for 3 to 3½ minutes, until the center is mostly set. Leave it in the microwave for 1 minute.
  4. Serve right away.

Notes

Prep 5 minutes, cook 3 minutes. For a sweeter taste, increase the sugar by ½ teaspoon, or use honey or maple syrup instead. The dry part (oats, sugar, baking powder, salt) could be pre-measured. Safety: the egg must be fully cooked; if the center is still wet after standing, microwave in short bursts.
