Ingredients

  • 1/2 cup dried scrambled egg mix
  • 1 teaspoon dehydrated chopped onions
  • 1 teaspoon dehydrated spinach flakes
  • 1 tablespoon freeze-dried shredded Colby cheese rehydrated
  • 1 tablespoon dehydrated red and green bell peppers rehydrated
  • 1/2 cup water

Equipment

  • saucepan
  • zip-top bags

Directions

  1. Half fill a saucepan with water and bring it to a boil. Mix the ingredients and pour them into a small snack-size plastic zipper bag.
  2. Lower the bag into the boiling water, keeping it away from the sides of the pan. Cook 1 to 2 minutes on each side.

Notes

Safety: for a shelf-stable jar version, all the dry parts (egg mix, onions, spinach, freeze-dried cheese, peppers) must be fully dry and sealed with an oxygen absorber; add the water only at cooking time. Freeze-dried cheese and egg powder are dairy/fat-containing and go stale or rancid once opened. The egg must be fully set before eating. Use a bag rated for boiling.
