Ingredients

  • 1 egg
  • nonstick cooking spray
  • kosher salt and black pepper to taste

Equipment

  • mug

Directions

  1. Spray the inside of a microwave-safe mug with nonstick cooking spray.
  2. Crack the egg into the mug and beat it lightly.
  3. Add a pinch of salt and pepper.
  4. Lay a damp paper towel over the mug and microwave on high for 30-40 seconds.
  5. If it is still runny, microwave 5-10 seconds more.

Notes

Use the egg in breakfast sandwiches or burritos: cool them completely, wrap tightly in foil and place in a freezer bag; they keep in the freezer about 3 months. Reheat from frozen by baking the foil-wrapped item at 350℉ for 5-10 minutes, until heated through. Safety: cook until no liquid egg remains.
