Ingredients

Hot chocolate mix
  • 6 tablespoons coconut milk powder
  • 4 tablespoons powdered sugar
  • 3 tablespoons Dutch-process cocoa powder
  • 1/2 teaspoon cornstarch (optional; use it if making with water)
  • 1/4 teaspoon sea salt
Topping and liquid
  • 2 tablespoons shredded coconut
  • 2 cups milk of choice or water
  • Whipped cream

Equipment

  • airtight jar
  • saucepan

Directions

At home
  1. Stir the coconut milk powder, powdered sugar, cocoa, cornstarch, and salt together in a small airtight container (easy to store, carry, or give as a gift).
At camp
  1. Toast the shredded coconut in a small saucepan over medium-low heat for about 1 minute, until just golden; set aside.
  2. Sift the cocoa mix through a fine mesh strainer into the saucepan, pressing out lumps with a spoon.
  3. Pour in 2 cups milk or water; whisk over medium-low heat until dissolved, whisking now and then so it doesn’t scorch.
  4. Heat until small bubbles appear; divide between two mugs. Top with whipped cream and toasted coconut.

Notes

Oat milk or a boxed coconut milk drink works well. Hot drinks around kids at camp: let cool before handing over.
