Ingredients

  • 1 part dried peppermint leaves
  • 1 part dried lavender buds
  • 1 part dried lemon peel

Equipment

  • baking sheet
  • mixing bowl
  • airtight jar

Directions

  1. Dry and chop the lemon peel and ginger first (see the notes).
  2. Stir the blend together in a small bowl, using 1 part peppermint, 1 part lavender, and 1 part lemon.
  3. Close up in a small glass jar.

Notes

To brew a cup, put 1 tablespoon of the blend in a tea infuser and pour 8 ounces of boiling water over it.
To dry lemon peel and ginger, peel the lemons with a vegetable peeler and cut the ginger into thin strips. Spread them in one layer on a baking sheet and dry in a 200°F oven for about 2 hours, then finely chop. If they aren’t fully dry, leave them on the counter overnight.
Store the blend in a small, tightly closed glass jar and use it within a month. Use only fully dried ingredients.
