Strawberry filling
  • 5 ounces fresh strawberries (roughly 1 cup sliced)
  • 1 tablespoon granulated sugar
  • ½ teaspoon cornstarch
  • ¼ teaspoon vanilla extract
Crumb topping
  • 3 tablespoons all-purpose flour
  • 3 tablespoons old-fashioned oats
  • 2 tablespoons brown sugar
  • 2 tablespoons softened butter

Directions

  1. Heat the oven to 350°F. Toss the strawberries with the sugar, cornstarch, and vanilla.
  2. For the topping, mix the flour, oats, and brown sugar. Work in the softened butter with your fingers until small clumps form.
  3. Spoon the strawberries into a 10-ounce ramekin and sprinkle the topping over them. Set the ramekin on a rimmed baking sheet.
  4. Bake for 30 to 35 minutes, until the filling bubbles and the topping is deep golden. Let it cool for a few minutes so the juices thicken.
